Perno Pizza Friday

It's been some time since I've blogged about a Perno Pizza Friday so I suppose right now is a good time to start back up! This Friday we decided to do something different & make calzones instead of regular pizza. I'm saying we even though Mike not only came up with the idea, but also executed the entire meal.

Mike picked up classic white dough, salami, spinach & ricotta & mozzarella cheese. One dough ball made two large calzones.

This was Mike's first time making a calzone so he was a tad nervous, hoping it would turn out well.

And let me tell you, they were utterly delectable!

I think I may have to convince Mike that this Friday should be a repeat calzone night!

In other news, I surprised Mike this week by having ceiling fans installed while he was away on business. It's so rare that I'm able to pull a surprise off, so I figured this would be perfect since we keep talking about wanting to put two up in our living room.

Our friend Matt was SO incredibly nice & came over on his day off to install them. We absolutely adore them & Mike couldn't believe his eyes when he got home! Thanks, Matt, you're the best!!

Weeknight Outing

Last week the weather finally cooled off here in hotter than heck Florida & we were able to get out of the house & get some fresh air & exercise. Summer is a challenge since we love to be active but it's just far too hot, so we take full advantage of Fall & Winter

And that makes Cam very happy!

Uh, maybe not.

Okay, he changed his mind, it does make him happy!

Last week was a bit of a challenge as Cameron was not much of a happy camper in the evenings. He was very short-tempered & seemed to meltdown over the tiniest thing. I think he was a bit overwhelmed with re-starting daycare after being away for a couple of weeks with his grammy in town. Not only that, but he started in his new, preschool class with a new teacher & new faces. It was a lot of change for a little one to handle so we cut him some slack!

And who could get mad at this sweet, little guy?

As much as I love the trees that are in the park by our house, I adore them that much more when they're lit with the orange glow of the setting sun.

Cooler weather makes me so incredibly happy! I love you, Fall, it's so good to have you back!

Finding the Balance

The series we've been discussing at church is called @work which touches on a subject I think about often since like so many others, I spend much of my week at work. Although, I never did give work quite as much thought as I do now that I have a child. And as much as I do enjoy my work, I find myself resenting the fact that it takes me away from Cam so much of the time.

I'm trying to keep in mind that God has me doing what I do each day for a reason & that I am helping to touch the lives of people when they're at their most fearful, vulnerable moments. But it can be hard to remember that when I'm tired, having a bad day or choosing the wrong attitude. As I headed out of church yesterday I was handed a small piece of paper which was given to me as a reminder of why we do the things we do Monday through Friday & how God is truly at the center of it all. This morning I posted it at my desk & it really seemed to help me turn my attitude around when I found it heading down the wrong path.

I have to say though that I think Americans spend far too much time working & rushing around. It seems like a sick joke to run from the time our alarms ring early in the morning until it's time to basically go to bed at night. Work, work, work with nothing but a measly half hour break, possibly drag myself to the gym after work, fly to the store for whatever odds & ends we may need, grab Cam from daycare, try to connect with him in the hour & a half that's left before bedtime. And in that time it's making/feeding dinner, bath, pjs, bedtime. Then it's time to clean up any remaining dishes from dinner, get the coffee ready for tomorrow, take a shower, and whew, it's about bedtime only to go to sleep & do it all over again the next morning. And as basically any working person does, I find myself just trying to make it to the weekend so I can have some quality time with my family to do the things we don't have time to do Monday through Friday. But when the weekend actually does come, many times hours upon hours are spent cleaning and uh, doing the things we don't have time to do Monday through Friday.

And when I notice myself becoming overwhelmed, I try & take a step back & remember that God has me on this Earth to serve a purpose. I remind myself of this as I make my rounds & see my patients. And even when they're feeling angry at the world & wanting to take it out on anyone in their path, I'll stand there & listen & be there for them. So many times I see them smiling as I leave their room & that's what makes it all worth it.

And this boy of mine makes everything worth it. Even in my most down moments, I know I'll be coming home to my love at the end of the day. And that is definitely something to be thankful for. So each night as I snuggle with Cam in his room before bed, we say our prayers & tell God everything we're thankful for. And really, I have so much to be thankful for... it's just a matter of remembering those things when the madness of the day tries to take over. And speaking of this boy of mine, today was his first day back to daycare in over two weeks & his first day in THE PRESCHOOL ROOM!! When Mike told me he was dropped off in that room this morning instead of his usual Toddler Room, tears came to my eyes. My little boy is truly growing up too quickly. Much of his day will now be spent on the potty & he'll be with kids up to three years old so he'll be learning lots.

So much to be thankful for.

What's For Dinner?

This recipe for Bombay Sloppy Joes caught my eye last week as I flipped through my Food Network Magazine (great magazine, by the way) & I thought it'd be a good dish to serve for football Sunday.

These Indian-inspired Sloppy Joes have garlic, ginger & Serrano peppers for lots of fresh flavor with a kick! Click here for the recipe.

Cooking is my therapy; my mind is quiet & I only focus on the task at hand rather than zipping around, thinking about the ten million things on my never ending to-do list. It's especially great when I cook while Cam naps!

My co-worker was nice enough to bring me cumin seeds that her in-laws brought from India. I had only used cumin in the ground form so this was a first for me.

Toasting up some pistachios & raisins for some sweetness & crunch.

We'll be enjoying this as our early Sunday dinner as we relax & watch football. Unfortunately the Bears aren't on until tonight... GO BEARS!!!

Oh & my sous chef Mike was nice enough to shell my pistachios! Thanks, big guy!

What's For Dinner?

Tonight I whipped up Rachael Ray's BLT pasta dinner which indeed had bacon & tomato but in place of lettuce, arugula was used. Rachael Ray is known for her 30 minute meals, but I must have been slow tonight since this took me closer to 45 minutes to an hour. But the dish had a lot of layers of flavor & a freshness to it with the arugula, parsley & basil.

Who doesn't love bacon?! Oh, you? Well, you should probably be committed!

The recipe calls for a toasted panko breadcrumb mixture that includes freshly grated Parmesan cheese & flat leaf parsley. I totally regret mixing this into the finished dish. If you decide to make this recipe, definitely keep it on the side & let each person top their bowl with this mixture which will give it a nice crunch. I was kicking myself as I ate my portion, but I guess you live & you learn.

If you ever have cherry tomatoes on hand & want to make a quick, fresh sauce, just add it to a pan with sauteed onions & garlic, cover tightly with a lid & cook for about ten minutes over medium heat (give it a shake every so often). After the tomatoes burst, season with salt & pepper & mash them into this delectable sauce.

Top with freshly grated Parm, have a glass of wine & viola, dinner is served!

Party Time!

Yesterday we celebrated Cam's 2nd birthday with our wonderful family & friends. It's always hectic to throw a party, but so worth it. In order to minimize the day of party stress, we decorated the house the day before while Cam napped.

We went with a Lightning McQueen/Cars theme & used red, yellow & black as our colors.

This was the banner that Cam's grammy made for his Chicago Bears themed first birthday party.

I made a bunch of Tastefully Simple dips the night before & Mike's mom made a fantastically tasty & healthy bean dip. My sis brought her buffalo chicken dip which is phenomenal & we baked it in the grill vs. the oven in hopes of keeping the house as cool as possible. And since I didn't want to be stuck in the kitchen during the festivities, we picked up pulled pork, coleslaw & baked beans from a local BBQ joint.

My sis & mom!

I was very happy with how the balloon bouquets turned out!

Unfortunately my dad & brother had to work & couldn't make the party & Auntie Erika wasn't able to fly down from Chicago either.

Staying cool in the pool! The unfortunate part of having a September birthday is that it's still sweltering hot in Florida... ICK!

So lucky to have such great family & friends in our life!

Cam scored some awesome toys & clothes which is fantastic as I cleaned out his drawers & closet a few weeks ago & things were looking rather bare.

Cam's cake turned out too darn cute!

We also celebrated my sister's birthday which is today; happy birthday, Lauren, we love you!!

I had no idea that Brian was so artistic! I must say, I was very impressed with his work!

Auntie Lo Lo & Leah!

Regardless of the heat, everyone seemed to have a really great time! It was so nice to have everyone together to celebrate the birth of my baby boy!
